Vegan Blueberry & Banana Pancakes with Almonds!

If you like sweet breakfast as much as we do, you must try this super healthy very blueberry and banana pancakes. 

Blueberry is a great booster of vitamin C. It also has a lot of antioxidants! In this recipe, we use almond flour which also contains many vitamins such as B2, B3 and E. 

This breakfast is super healthy and also very delicious, it's great for sharing with other members of your family!

 

Ingredients:

200g ground almonds

1 banana

2 tbsp chia seed (mix with 6 spoons of warm water and lave for about 15-20 minutes)

1 tsp baking powder

small pinch of salt

1 tsp cinnamon

180 ml plant milk of your choice

2 tbsp clarified butter

Preparation:

Mix all dry ingredients (baking powder, ground almonds). In a separate bowl, mix all wet ingredients: milk with mixture from chia seeds and blended banana. 

Heat clarified butter in a pan, pour some of the pancake mixture adding few blueberries on top. Fry pancakes on both sides.

You can serve them with maple syrup and some walnuts/pecan nuts or almond butter instead.
